This is the one thing I pretty much always want to eat in the morning. It’s easy, healthy, and so delicious.
Grate your sweet potato
sauté over medium-low (the potatoes burn easily, then they taste awful) in coconut oil with
Whatever other veggies you want to use. I usually just do the sweet potatoes alone, but this time I used onion, red pepper and a little kale wilted at the end. And highly recommend it.
Top with an egg. I either do a sliced hard boiled egg or fried. If I was fancy I would poach it.
